
27 Sep Wild Side Dish: Wild Rice with Wild Mushrooms
WILD RICE WITH WILD MUSHROOM: THE SIDE DISH GONE WILD
I love Rice Krispies (keep reading this is about the rice side dish). Let me clarify: I love Rice Krispies-like recipes where you pop into the kitchen for 10 minutes and emerge with a dish that the people of your household and guests will ogle in amazement and drool with anticipation – and yet, you’ve done it all in 3 steps – Hazzah!
This wild rice with wild mushrooms is off the hook awesome and super easy! I’ve adapted this recipe from a Bon Appétit Magazine November 2001 issue.
Ingredients
1 package of Uncle Ben’s Natural Select rice (either Chicken & Herb or Wild Rice flavors)
4 tablespoons (1/2 stick of butter)
2 pints of mushrooms (such as crimini or shiitake) chopped up
¾ to 1 cup chopped fresh Italian parsley
1 ¾ cup coarsely chopped dried apples or dried pears
- Start this recipe by following the instructions on the package of rice – cook the full package.
- Melt butter in large pan and sauté mushrooms until they are deep brown
When the rice is ready add the mushrooms and stir, add the chopped apples (or pears) and stir, add the parsley and stir – and Enjoy!
TIP 1
This dish is so easy and so versatile that it could be made into a main course by adding cooked chicken. If you’re really in a pinch for time, think leftover cooked chicken or buy a rotisserie chicken and you’re good to go!
TIP 2
This dish is easy to double if you’re having a large group and freezes very well in Ziploc freezer bags and individual and immediately awesome side dishes.
